Lamb Rack with Pesto

Ingredients
  1. 1/2 cup of basil
  2. Handful of pine nuts or almonds
  3. 1-inch cube parmesan cheese (grated)
  4. 2 tbsp of extra virgin olive oil
  5. Pesto
  6. 1 Marinated 500g Lamb Rack
Steps
  1. Prepare the pesto.
  2. Combine half a cup of basil, a handful of pine nuts or almonds, a 1-inch cube parmesan cheese (grated), 2 tbsp of extra virgin olive oil, and blend.
  3. Taste and add more salt, olive oil, or cheese according to your preference.
  4. Preheat oven to 200 deg for five minutes.
  5. Remove lamb rack from packaging and pat dry.
  6. OPTIONAL: Season your lamb rack with salt, pepper, other spices (if your lamb rack is not pre-marinated!)
  7. Roast in the oven for 8 minutes.
  8. Remove from oven and sear on high heat on the stove to get a nice crust.
  9. Serve lamb rack with pesto on top.
