One Pot Unagi with Mushroom & Eggs

Serves 2-4

Ingredients
    1. 1 Unagi
    2. Chopped shimeji mushrooms (other mushrooms work too!)
    3. Chopped red onion
    4. Sukiyaki sauce
    5. 2-3 Eggs
    6. Salt & pepper
    7. Frozen corn kernels
    8. Sesame seeds
    9. Chopped green onion
*Note: This one pot meal uses a hotplate, but a using a pan works too! 
Steps
  1.  Start by stir-frying shimeji mushrooms (or mushroom of choice) 
  2.  Once cooked, take out the mushrooms and stir-fry chopped red onions until brown
  3. Add the mushrooms back in and stir fry evenly
  4. Add in sukiyaki sauce to taste and mix
  5. Place unagi into the hotplate/pan
  6. While the unagi cooks, beat eggs and add salt and pepper to taste 
  7. Drizzle beaten egg mixture around the unagi
  8. Add in corn kernels into the dish
  9. Sprinkle on some sesame seeds and chopped green onion
  10. Serve with rice and enjoy!
