Healthy Kale Pesto Pasta

Serves 1-2

Ingredients
  1. 3 cups of Kale
  2. 2 cloves of Garlic
  3. 2 tbsp Lemon juice
  4. 3/4 cups Nuts: Pistachios, walnuts, pecans (to bring out flavor!)
  5. Salt and ground pepper
  6. 1/4 cup Extra-virgin olive oil
  7. 1/3 cup Parmesan cheese
  8. 1-2 tbsp Unsalted butter
  9. Pasta (whole grain for a healthier option)
  10. 1 cup Reserved pasta water
Steps
  1. Cook kale in a pot of boiling salted water 
  2. Once the kale is cooked, take it out and leave your pasta of choice in to cook until al dente
  3. Blend your dry ingredients (kale, garlic, nuts, parmesan cheese) in a blender or food processor until well incorporated
  4. Drizzle in olive oil and lemon juice while blending
  5. Add in salt and pepper to taste
  6. Blend till smooth
  7. Transfer cooked pasta to a bowl and add in your butter and pasta water
  8. Add in your pesto and mix to coat the pasta well
  9. Garnish with more parmesan and pepper to taste!
